Select personally - and maniacally! the best ingredients from local organic products, Slow Food Presidia and vegetables from the bio-vegetable garden in Vedetta. Sommelier Francesca Fommei oversees the selection of wines from the wineries of the Maremma Wine Route (including Monteregio di Massa Marittima, Montecucco, and Morellino di Scansano, as well as from the DOC of nearby Bolgheri) and bitters, grappa, and liqueurs to be nibbled after dinner next to our exciting brazier.

ORGANIC OIL
“It’s the result of our ancient olive grovewe recently brought back to life.
The olive trees are free to produce as many olives as they want whenever they want.
We only take care of their health and clean the soil.”
The organic extra virgin olive oil from our farm, La Forcola, is produced in various volumes depending on the harvest. It stands out for its fresh, fruity aroma and harmonious, slightly spicy taste. It’s used in the restaurant’s kitchen and is sold at our shop.
