Every dish enhances with creative interpreter the best local culinary traditions.
We meticulously select the best local organic produce, Slow Food presidia, and vegetables from Vedetta’s organic garden.

Francesca Fommei, the Sommelier, selects the wines from the wineries of the Maremma Wine Route (e.g., Monteregio di Massa Marittima, Montecucco or Morellino di Scansano), amaros, grappa and liqueurs to be enjoyed after dinner around our brazier.

The organic extra virgin olive oil is produced on our farm, La Forcola.

The organic extra virgin olive oil from our farm, La Forcola, is produced in various volumes depending on the harvest. It stands out for its fresh, fruity aroma and harmonious, slightly spicy taste. It’s used in the restaurant’s kitchen and is sold at our shop.
